The process of making Champagne is a complex one, with numerous different steps, each requiring specific techniques. Harvest, pressing, fermentation, blending, tirage (bottling stage), prise de mousse, remuage (riddling), dégorgement (disgorgement)… With its unique culture and history, Champagne has now entered into everyday speech as a term of celebration and festivity.

The prestige cuvée Belle Epoque Rosé 2012 is delicate, yet also rich and voluptuous; intense and powerful, with great finesse. The result of a year of nature’s generosity. After a mild winter, spring frost and hail caused damage to the vineyards. By mid-July, summer had arrived in earnest, with dry heat and ample sunshine to bring grapes to perfect maturity across all crus. The rain returned at the end of September, just as the harvest began. Although marked by difficult weather conditions, 2012 nevertheless produced wine with promise. Perrier-Jouët Belle Epoque Rosé 2012 is a cuvée characterised by the aromatic richness and freshness of Chardonnay, balanced out by frank, lush Pinot Noir and fruity Meunier grapes.
Pronounced aromas of flowers ¬– rose and peony – small red fruits – wild
strawberries and raspberry – and pink grapefruit.
A frank attack followed by a beautiful roundness, with a long, silken finish. A
particularly balanced wine.
After a cold winter and spring with plenty of frosts, temperatures began to warm through May and early June. However the end of the month turned fresh again, extending the flowering period by almost two weeks. July was dry and moderately hot, but temperatures dropped again in August. Luckily the warmth returned in September and by harvest the grapes had attained a perfect balance of sugar and acidity.

A lively freshness reveals harmonious fruity and floral aromas: white flowers (blossom, lime, honeysuckle) punctuated with fresh fruit flavours (lemon, peach) and yellow fruits (apricot, mango).
The attack fills the palate with a beautiful structure, balance and roundness developing into notes of buttery brioche and hints of vanilla. Delivering a gentle note with an agreeable persistence on the finish.
